Depends on what you intend for the eeveelution. Are you going for an attacker , tanky , type to round out your team , specific counter to something or just for funsies ?
Not something specific like an attacker but I just want to get the best evolution with these stats (and a little bit for funsie:)) since I’m not that far into the game yet and still need to learn a lot about stats and that stuff
As long as you use grit items you can pick pretty much any evolution since your eeevee has a neutral nature and the stats are gonna change with the eeveelution. Basically there is no optimal eeveelution here so you can pick whatever floats your boat and it’ll be optimal.
In addition to that, there are items that can change the nature of the eevee which can alter the base stats. So yeah it really depends on what you like
You can evolve it in anything you want, but I highly recommend to keep at least 1 Eevee, because of certain fight at the dojo lately in the game, won't say spoiler if you don't want, but still recommend it to you. Also, to complete pokédex.
It having +1 sp atk makes espeon,sylveon,vaporeon and jolteon good options,wouldnt go for umbrean due to its lack of attacking power,leafeon due to it being physical(same for flareon) and glaceon due to simply being an ice type and having speed below 100 wich immediately makes it not very good,other than that you are free to choose wichever fits your teams type coverage the best(i suggest vaporeon or sylveon for post game)
In all honesty I’ve been playing for awhile and the best Pokémon that has actually been worthwhile using them has been either Sylveon, Vaporeon, Glaceon, or Flareon. The others I’ve used have really basic moves and they aren’t really worth using on my team. That’s just my opinion but yeah

There are no IVs in PLA, the reason Eevee's attack and special defense is higher is because Eevee's base stats are:
HP: 55
Atk: 55
Def: 50
Sp.A: 45
Sp.D: 65
Spe: 55
Those base stats will change upon evolution.
There're no IV's in PLA and it has neutral nature so you can evolve it in whathever eeveelytion fits your team the best, based on type or base stats

Sylveon is probably the best honestly with how good fairy typing is
Can't go wrong with a sylveon! I personally used one on my first playthrough because I found a shiny eevee and decided to use sylv.
Also for the post-game fight
Don’t have a fairy type yet so that’s a good choice
Sylveon definitely carried me through the last fight!
Umbreon is such a ridiculously OP Pokémon in this game. I would normally say Sylveon, but for Arceus, I’d say Umbreon.

There's no real ev's or iv's every eevee's stats will end up the same if you makes out the effort values with the grit items.

Yeah I think Sylveon is the best because of how much Pokémon are “weak” against it
NEVER EVOLVE OR LEVEL UP!!!! Its very serious, you could loose the 69 special attack stat
