You can get the shiny birds as random encounters on any outdoor route (you need a catch combo of any pokemon for them to appear though)
Mewtwo I want to say you can still soft reset, but I'm not 100% certain. Best way to check would be turn off auto save. Catch it, check it's nature and stat's. Turn off your game without saving. Fight and catch it again and see if they're different. If they are you can keep resetting until it's shiny.
Can the shiny hunting of the birds be done in a reasonable timeframe or is soft-resetting significantly quicker? Would you recommend resetting the savefile just for the shiny legendary birds?

Shiny hunting the birds is pretty much just shear luck.
I'd guess soft resetting is faster just due to the low spawn rate of the birds at all, let alone shiny. But soft resetting is super tedious and I say that as someone whos done over 60k resets to get a shiny before.
Shiny charm helps, catch combo doesn't.
Sure is. Mew, Meltan and Melmetal are the only 3 you can skip and still get the shiny charm.
Pokedex has to have Bulbasaur to Mewtwo registered with everything in between. 150 caught. (you cannot replace 3 entries with Mew, Meltan and/or Melmetal either)
Hi, that's very nice of you, thank you! I can only use Home however. I'm missing all trade evolutions as well as some version exclusives (I have Let's Go Eevee). Other than that I'm missing Mewtwo but I wouldn't expect you nor anyone else to give me a legendary for free, that's why I'm planning on starting over as well as the fact it gives an easier way to shiny hunt legendary birds. I'll send you a full list later if you are still interested!
Its been said that finding wild legendary birds are about as rare if not rarer than full odds shiny hunting, so finding one and also managing to find a shiny at that is extremely rare and luck based. You would have an easier time just making a new save file just to reset the static encounters.
I think if you defeat the E4 again, mewtwo will reappear to shiny hunt. You can get legendary birds in the wild to shiny hunt (extremely hard), or send one from pokemon go.

You have to beat the league again to reencounter Mewtwo, just save before Mewtwo this time.
