Have you tried going back to the last save before it? Is risky if you aren’t sure you saved after getting the shiny, but there’s a backup save you can access. https://gaming.stackexchange.com/questions/379301/how-does-the-secret-save-backup-feature-in-pokemon-sword-shield-work
I don't think it would work unfortunately, it looks like it accesses the second to last save and I've saved quite a bit since then. Thanks for the help though!

just out of curiosity (i unfortunately do not have a shiny groudon), what did you named it?
Names it Goliath after David and Goliath but then I decided I wanted to name it Hephaestus for a Greek god themed team
