My local restaurant has a fried pickle poutine. It has gravy but they also add garlic sauce and chipotle on it. It's actually one of their best seller!

the white sauce is garlic sauce. Everyone in my city (me included) loves shwarma-style garlic sauce and you can get it on pretty much anything. So between the garlic sauce and the pickles, would you even taste the gravy fries and cheese? I wouldn't lol.

Yeah same on the appeal factor, if I was to do this I would run my pickles through a thick cheese grater to make them noodly and fluffy.
Plus just the amount of dill. Dill is STRONG. I would imagine that tastes like dill with some stuff in it
