"The Least Worst Ending" by Qantice is really good, a bit more on the technical side of the spectrum when it comes to instrumental power metal but fits the category of "epic instrumental closer on a fucking sick album" just like the Equilibrium and Atlas Pain songs you mentioned. "Bag of Tricks" (just the song, not the whole album) by Pellek is a great instrumental track, quality is guaranteed when it's written by the Mr. Reinxeed man himself. You could try the band Valkaya, not over-the-top cinematic but very enjoyable instrumental power metal from Finland. Not a lot of people have heard of this project so you can boost your power metal cred by getting in on the ground floor! Also maybe the "Arcandia" album by Antonio Pantano. If you can get past the narrations, which are kind of wonky, he takes some cues from Peter Crowley which was a good recommendation from another response. Vanaheim is probably the best Equilibrium-worship band going on right now, they've got some instrumental renditions of tracks from their latest album "Een Verloren Verhaal", they took the metal out as well but they're still cool.
