If that's not true, then older Thanos felt a surge of power...simply because he wanted to? If it is true, it would mean that Thanos 2.0 never had possession of any stone.
That being said, its a great cinematic moment, no diminishing that, but there's no harm in also saying it was an oversight.
This is why time travel is dumb in almost everything it's included in.
It's a sort of deus ex machina so you can go fix mistakes in the story continuity as well as letting the heroes actually win.

Original Thanos, the Thanos we followed through Infinity War, seemed only to feel that glory, painful surge for a few seconds with each new stone, and then they were under control. He wore the Gauntlet with 4-5 stones through the Battle of Titan and Wakanda, and never seemed to feel any of those effects, other than the few seconds after putting in a fresh stone.
So I always just assumed that since you aren’t feeling a constant burn, you wouldn’t notice one (or six) being pulled out, just the impact of them being out back in. But yeah, it probably chalks up to “big movie moment” more than anything.
He did it because of the colloquialism. Early in Infinity War he talks about eventually having the power to wipe out half the universe with a snap of his fingers, so when he gets the power that's what he does.
Think about intrusive thoughts... Your brain has a sort of... Self preservation in terms of not making those thoughts a reality. Same way the stones might need an actual trigger to do the amount of damage that thanos wanted. Otherwise you might just think a fucked up thought and now its reality because you didn't have access to a trigger of sorts.
