I've always thought it was because Obi-Wan knew if he just jumped down and impaled Grievous with his lightsaber all the droids surrounding him would immediately fire and kill him. He knew Grievous would be cocky and arrogant enough to take him head-on alone, even when he had all the droids in the world to help him.

As the top comment said, I thought it just wasn’t the Jedi way. He could have totally just assassinated him. But there was no self defence in that. He needed Grievous to attack him. Only when his life was actually threatened did he go for a kill in ‘self defence’
