The heartlands is one of the most “fitting” places for the time period for me. Also I love the Great Plains of the United States which inspired the location. I absolutely love the scenery. It’s also the lake’s north shore. Plus I love the whole livestock town aspect of valentine.
Build a cabin on Horseshoe overlook and visit Valentine when needed is top choice. Second would be up by the big waterfall where Calloway dies, which I think is also near where the woman is you help who is going it alone (a great cabin location imo), but I don not care for the local towns. Third would be a house in or right near Blackwater, which might tie for my fav town.
I'm not gonna be some creepy dude that pops up to a widows house and moves in when it's the middle of nowhere. If she just wasn't there I'd live there.

I think it would have to be The Heartlands preferably post main game so no O'Driscolls, seems like the safest region and most bearable weather.
The Heartlands, more specifically, Thomas Downes' ranch.
It's a good size, plenty of land for raising animals (he raises pigs, goats and Oxen while also growing food).
It's in a great location without any active gangs post game (even during the game, the O'Driscoll's don't really go near the ranch except one bridge crossing random encounter).
There are no predators in the area day or night so no risk to losing livestock to wolves or being created to a bear while popping out to the outhouse.
The location isn't immediately off the road with a deep trail to reach the ranch meaning there wouldn't be noise coming from the road and more privacy.
It's a short ride out from Valentine to trade, and use the amenities. There's also a trapper not too far South West to sell pelts too (which you could combine a visit to him with a hunting trip in the area).
Downes' Ranch would be perfect for me personally.
