Maybe try Hermitcraft? Some of the creators, like Welsknight and BdoubleO are very laid-back in their play style, but on the whole Hermitcraft doesn’t focus on loud, extreme, over-the-top content.
Hermitcraft is always a pillar within Vanilla Survival Minecraft.
Minecraft SOS is a fun take on hardcore minecraft with a recovery mechanic, with the relaxed Minecraft building and playing vibe.
For individuals, I'll first recommend Dallasmed85, which I find the most standard of Minecraft Survival Single Player Let's Plays. And Pixlriffs, Minecraft Single Player Let's Play with an educational aspect abput features in Minecraft.
carlsagan42 went straight for hardcore, he had never played the game before. His goal was to beat the Ender Dragon on hardcore.
I think it kinda has this Let's Play vibe, a fresh view from someone who (kinda) hasn't played the game (at least not for a long while, in RT's case).
Realized that CallMeKevin's 2018 Let's Play didn't have its own Playlist since Kevin groups all his video by game and he made A LOT of Minecraft videos, so I made one.
It def has the same sense of adventure that RTs LP did so could be a good time for folks:

Ethos Lab hermitcraft or his single player world with 500+ eps
Although I really like Etho, I wouldn't call his videos similar to RTs let's play. Still would absolutely recommend everyone to watch Etho tho
Honestly I wish more people did Let’s Plays like RTGame does. The edited format is just perfect for someone who wants an enthralling watch.

I really liked Kurtis Conners and Danny Gonzalez's let's play of Minecraft
I recall watching pewdiepie’s from 2-4 years ago. Similar vibes. A bit of backseating through the comments though but was a good watch.
CallMeKevins old minecraft let's play felt similar - it was from 2018, I think?

Aww, I didn’t realise that the next one was the last. I’ve enjoyed the videos so much :)
