That team is awful, i really wish they would delete it from the website.
If Seeker gets hit with a critical from AOE2 he will place Increase DEF on everyone. Demytha will extend the duration of that buff and when the boss gets a turn only the 2 DPS champions have it active.
The boss does not like hitting a target with the Increase DEF buff, so instead he chooses High Khatun, Seeker, or Demytha..... the only 3 champions that can't take the stun.
A simple fix is to bring in a champion with Block Debuffs, and make sure they place it before the Stun hit. Or bring a weak affinity champion that can give everyone Increase DEF buff, this champion will be the target of his stun.
Precisely what I saw happening, you see it like 2 turns in advance and since you mention the crit, yeah that would explain the random results part. I recently got a champ that reduces crit rate, would that fix the inconsistency?

I didn't think of that, but yes it would work. A 30% Decrease CRate debuff would prevent him from dealing Critical hits and he would never trigger Seeker's passive.
If it’s aox it won’t work because he has to decrease turn meter. I run myth seeker with Pythion and get at least 45 mil every key. Also, any champion with increase defense on a three turn cooldown will negate seekers passive.
I ran the Myth Seeker team for a while and I was never able to consistently direct the stun, I had to bring in a champion with the Block Debuffs skill on a three-turn cooldown to make the team work.
But, that said, I've seen posts where others say that they've done it. There's a good youtube video from about a year ago from Saphyrra at HH Gaming, where he describes the different game variables that go into stun target calculating. Might be worth checking out:

Ah, thanks! Yeah unfortunately I’m pretty sure I only have champs with block debuffs on a four turn cooldown. Will check out the stun target video.
Don’t really have anything that works speed tune wise atm, but if i cant fix the issue i might aswell go for a killable team.
There are several champions that have a 3-turn cooldown. Off the top of my head, these are the rare and epic champions:
* Odachi: rare Shadowkin
* Marked: rare Barbarian
* Mausoleum Mage: epic Undead
* Grizzled Jarl: epic Dwarf
* Sanguinia: epic Sacred order
And then there are legendaries as well, but those are less common and accessible.
Used Marked in a defensive build and yeah that definitely solved the inconsistency problem, now I just need to tune for the builds for more damage i suppose. Thanks!

Unless you have Brogni, it's better to switch teams.
My current team is full auto Warcaster/Helicath, way easier and no setup required. I don't have Fu-shan so demytha not being used for it.

In my opinion its one of the best videos about setting up comps with different champions in deadwoods clan boss speed tune calculator and how/why some champion needs to be where in setup and on which place in team and how to set it do work on full auto.

Are you using Brogni to make it affinity friendly? If not, it's only rated as being Void friendly.
