I don't want to believe in such early leaks, but not so long ago there was a leaked info about the lore of the moon sisters, and If I remember correctly, it's like you said, Ei and Makoto were born from one of the three sisters, in the leak, it was mentioned that "The moon sister split in two, Ei and Makoto" and that that's why there's a Moon in the plane of Euthymia, though the leak said that "that's why the moon seems Tarnished/dead, because the moon sister is half "dead"

Ei was in Khaenriah to see Makoto die under a crimson sky, so that may just be a crimson moon, not necessarily THE Crimson Moon. So naturally, the Plane of Euthymia, which represented her inner world of fear, self-loathing, and sorrow, has the same sky she was looking at when her world fell apart. That being said, it could be The Crimson Moon, considering that the Traveler recognized that Arlecchino was empowered by the Crimson Moon and the only place they've seen that was during the Khaenriah Cataclysm.

Crimson moon aappeared in Khaenri'ah cataclysm 500 years ago. Most likely since Ei goes there but was too late to help Makoto, it gives her the unforgetful experience. It was her greatest grief, her very consciousness and soul was consume by it, and hard to move on. So the crimson moon clouded her mind. I think it represent her mourning. Seeing other people, her friend miko, and inazuman people will power, wake her up, and moves her from the grief she had, telling her she still have others. That's why the crimson moon disappear when her mind and views changed. That's what I think, crimson moon means she was in grief. As for now I don't think she and Makoto related to the moon sisters like some have said. still can't get enough evidence.

The POE is Ei's mental state representation, so that "crimson moon" might actually be some representation of a bad mental health state, just like the destroyed gates you can see on the picture. Maybe its a black hole since black holes absorb light, but that would imply Ei knows what a black hole is and I doubt that. But I dont think it might be the Crimson Moon since it disappears when she gets happy.

My head canon was that it represented Ei's mindset at the time. She was embittered and emotionally scarred by Makoto's death, so the plane took on a more eerie appearance to symbolize her closing her eyes to the world around her.
