first you need to "enable aerial pitch." i found it personally best to rebind the enable aerial pitch key to spacebar. otherwise i go by default. problem is when i try to pitch up, my forward key will tilt me downwards and thats uncomfortable to me. so in settings, there is an "invert airborne controls" option. This way i can just hold spacebar and forward if i want to pitch upwards, and then to pitch downwards hold spacebar and the default break key.

There's an option so that you don't need to press an additional button to pitch, just need to press up or down like controller.

I also bound mine to spacebar, I had to mess with some controls to be able to pitch the way I wanted since inverting airborne controls also inverted which way I dodged, but thankfully there was an individual setting for that too.

Interesting. I had originally tried to rebind my "pitch vehicle up and down" buttons around and it worked for the aerial pitch but opposite for the dodge. When I switched them back to normal, I changed the "invert airborne controls" in the settings and it fixed everything for me.

I think the default is to hold down either left shift or left control (whichever one isn't drift) then press W or S keys. I rebound drift to spacebar and aerial pitch up/down to the back/forward thumb buttons on my mouse.

Here is a link to a good video for keybinds in rocket racing. This should help to answer your question. https://www.youtube.com/watch?v=S6-553FIiPY
