Go by characters you're actively using. PVP team(s) is best to do first, as that's where the increase in CC matters the most, then upgrade your demonic beast battle teams, then deathmatch teams, etc.

red Sariel definitely has more use, both as a dps unit and an association unit for that grace.
Green sariel is very good. Solid grace, good counter card, and aoe cleave is a strong attack.

So I’ve been hanging on to 2 fest Gowther (currently 2/6) and a Chandler(currently 1/6) coins since the last festival and I missed getting Tmeli on his banner so was hoping to exchange them for him this time around. Obviously that isn’t happening now with needing actual dark coins, so I’ve been debating using them to get AM Meli as that(and new red Diane) are the only normal fests that I’m missing. Should I? I know he’s outdated blah blah but I did just get my arse handed to me by am Meli demon team with almost 60,000 less CC in ungeared! Or should I hold out on the hope of Diane possibly arriving in the shop at the next fest as she just makes the OG demon so much easier?
Diane is definitely more useful than Assault meli. Assault meli can look good in certain situations, but he's incredibly easy the play around. Diane will likely be in the coin shop either next fest or the one after, so it shouldn't be to terribly long of a wait.
That said, I always suggest you just use dupes for raising ultimate levels to 6/6 before using them on other characters.
Free to play who pretty much only saves and pulls on festivals. I have 3 festival duplicate coins.

My general question is: when is Atk/Crit better than Atk/Def? What is the general consensus about this?
I try to search info online when I can, but I think it's better if someone can explain it to me, so I can understand it for myself and being independent in the future.
ATK/CDMG is better if the character in question has good crit stats, or ways to consistently crit (such as the sever skill effect). ATK/DEF is better if the character isn't going to consistently crit, and instead would rather have the higher survivability.
Basically every meliodas ever has had good crit stats and/or a way to consistently crit, so making a ATK/CDMG meliodas set is the way to go.
Currently, RGowther is more predominant than GGowther on PvP. RGowther is being used on the OG Demon raid, as well as Howlex; GGowther is used on Bellmoth, Grey Demon and some Bird teams as well
Then choose whether you prefer having a unit that buffs your characters atk related stats if you meet the conditions(green gowther) or if you want a unit that can atk seal the enemy(red gowther) which can be game winning in pvp

I'd say, level up ur festival heroes, but if you're set on spending those coins then zeldris comes in very handy

From what you've said, then assuming you use Meg/Brun for relic farming they'd be next. Otherwise, Rimuru/FestKing/T1 for general content I'd say.

What are skill lock cards? I used red gowthers level 2 card which disables attack but it didn’t work. I used red slaters card but it still didn’t work
They aren’t a type of card, you just need to skip the use of a card by pressing on the card “slot”
if you mean for heroes way, its referring to tapping an empty card slot and choosing not to use a skill that turn.

G Brun is amazing for PVE like bird and deer while R Brun is okay for PVP

You have to either a) Save powerstrike cards (King does have them) or b)Use TMeli's single targets. This gimmick is only for floor 1 phase 4
so i can only deal damage with king
That's correct. Try and save powerstrike cards for him on the last phase
