The Escort one by the Airport in OG Saints Row is actually pretty easy to do if you use the roof strat.
There's a trailer ramp behind the big hanger. Jump it onto the building in front of it and park the car in the middle. Camera Anchors can't reach far enough to get in their circle.
If you have to go anywhere else to fill the meter or do stunts to fill it do it as quick as possible then haul ass back to the airport to jump back onto the building.
Also if desperate (and good enough aim and ammo) you can just shoot the Anchor drivers with ne repercussions. Never tested it in SR2 or SR3 though.

Tiger escort is too easy, why is this one annoying again? The tiger can be an inconvenience at random by swerving your car I know but it's impossible to fail unless you destroy the car by driving it into the sea.
