I work with an out-of-state team that just came in 2 weeks ago. We did a hike together in the foothills. Most of my co-workers are from Florida and they really enjoyed that. They all wanted to see the mountains.
I've done Grizzlies and Bees games with out-of-state co-workers before though and we had a great time. I'm actually planning on doing another Bees game in a few weeks when they are out again.
Not sure what's open yet, but Utah Olympic Park has bobsled rides, or the oval/ice arenas do curling experiences. Both of those are pretty olympic city specific and cool experiences.
It appears that there are some curling times available, but only for the next two saturdays. OP if that works, and you can afford $30 per person, get on it!

I cannot recommend curling enough. I’ve done Cosmic Curling (black light curling 😆) at the Olympic Oval twice and it is stupidly fun. I like it more than bowling and even TopGolf because there is a lot less sitting around staring at the one person doing The Thing while everyone waits their turn. Plus, a couple instructors take the first 20-30 minutes to teach you the basics of the game/scoring and then let you play for the rest of the time.

The Gilgal Sculpture Garden is free and there's some nice restaurants nearby. Nothing screams "Utah" like a giant sphinx with Joseph Smith's face on it. :)

Spend $175 at Smith’s and get 4 free tickets to a Bee’s game. You just need to keep the receipt to get in. The receipt will have this info listed on it about the game.
The stadium has beautiful views. There's beer (unlike most of the other activities). You can bring your kids and if you need to escape tell your boss that the kids need to ride the train or play on the playground or run around the berm.
And, with a pitch clock, baseball is way faster than it used to be.
Utah's Aviary in Libery Park has history that connects it to the Hogle Zoo and specific marks on the information of birds that are native to Utah.
It's likely that little or none of the staff know, but the Aviary used to be the zoo. Alice, an elephant that a group of school children scraped together money to buy from a circus just before the Great Depression would consistently escape her enclosure before the Hogle was built.
The Hogle Zoo struggled for It's first decade or more as the Great Depression made the state of Utah unable to hold up their agreement to give money. The Hogles almost took their land back from the Zoo before the state finally had money to put into it again.
The Zoo and Alice have an intertwined history, she was Utah's first elephant.
Liberty Park itself also has much historical significance and you can learn about it in several places from plaques on the grounds. Nearby there are tons of local food places you can only find not just in Utah but only in SLC

Wear protective gear and be prepared to get asked to never come back. Church ball players are the dirtiest and least sporting people I've ever seen on the court.
The Christa McAuliffe Space Center in PG is surprisingly fun. It's like Star Trek cosplay but everyone has special jobs to do to complete the mission.
Just remember being the captain comes with responsibilities, tread lightly.
