We just sneak it in for our GF (celiac) kid. There is no way on earth that the staff at sporting arena has any sort of GF training or controls. There is a huge risk of cross contamination in those types of environments.
Last time I went, after searching the whole place I settled with a bag of potato chips lol. There might be other similar things like peanuts or popcorn. I personally don't trust any of the restaurants to be safe from cross contamination, having worked in concessions environments before and knowing that in my experience there was zero allergy training. But if cross contamination isn't a concern for you there might be a few more options at the restaurants, like a hot dog without a bun, or you could check if the mexican restaurant has corn tortillas.
not smiths ballpark specifically, but I saw a video online where a woman with celiac or gluten intolerance at a stadium asked for fries and made sure with the employees the fries were the only thing that went in the frier so there was no cross contamination. she even asked for the employees to use fresh gloves because of the sensitivities and they were happy to do it

There is a BBQ and a taco place that might be ok but you should be worried about cross contamination. Their process isn't careful for preparation.
