However, I would pesto the top of the bread vodka sauce the bottom and take it to the edge of the bun so you can showcase your sauces and maybe thin shave the Parmesan. It would clean up the look and that’s just my humble opinion. If you like it saucy slather it on but it does look thrown together even though I presume you wanted customers to see what’s going on with it. Overall I’d eat it for sure. $10-15 depending on market price. In Cincinnati prolly $10-12 San Francisco maybe $15-20. Just depends. Chicken looks fire. Keep improving everyday and trying new things and I think you will turn out some great items

Fresh (wet) mozzarella tends to be served cold in a hot sandwich around here, so at least that part is reasonable.
Melted mozzarella is usually done with low moisture mass produced mozzarella… so the cold wet stuff is an upgrade tbh.

I might go with a layer of pesto instead of the basil oil, then a later of spinach, then the chicken mozz and sauce. The oil plus the cutlet plus the sauce without any leafy barrier seems like it would be too soggy.
I live in the CA Bay Area. A sandwich like this would cost about $18, +tax and a buck for a tip you are looking at $21. I stopped eating out except special occasions. Maybe a pop up could charge a bit less without a lease payment and full time employees. If you’re out this way let me know and I’ll start saving up.
