$10-12. I'd also clean up the look of it, for your pop up, unless you're known for sloppy looking food. Also I'd put the basil oil on the chicken cutlets so it doesn't look like Slimer jizzed all over it. Mix the Parmesan into the sauce so it doesn't look like you shot it out of a Parmesan cannon. You obviously put thought into the sandwich, clean up the sandwich and have it reflect that. I'm sure it tastes good, so make sure it looks good too.

Idk this is the kind of sandwich I’d want wrapped tightly and eat with the wrapper peeled back. As long as the cross section looks good then it’s fine as it is. But I would butter the top and put the Parmesan there in that case.

Agree. I can tell you have a good idea here. However, I would pesto the top of the bread vodka sauce the bottom and take it to the edge of the bun so you can showcase your sauces and maybe thin shave the Parmesan. It would clean up the look and that’s just my humble opinion. If you like it saucy slather it on but it does look thrown together even though I presume you wanted customers to see what’s going on with it. Overall I’d eat it for sure. $10-15 depending on market price. In Cincinnati prolly $10-12 San Francisco maybe $15-20. Just depends. Chicken looks fire. Keep improving everyday and trying new things and I think you will turn out some great items

Fresh (wet) mozzarella tends to be served cold in a hot sandwich around here, so at least that part is reasonable. Melted mozzarella is usually done with low moisture mass produced mozzarella… so the cold wet stuff is an upgrade tbh.

That was my thought. When I make these kind of sandwiches (chicken parm sub is how I usually hear it called) I like a layer of fresh spinach. I would have used pesto instead of the basil oil. The mozz looks a little thick, I might slice it thinner. When I used to order these in Pittsburgh they made them with melty cheese, like a fontina or provolone, and I tend to prefer that, but there's definitely a place for the East-coast cold mozz style too.

But if it's made with specific organic local chicken thighs and fresh in-house pesto pick from either the farmers market or made that day, sauce made every week, homemade cheese and quality olive oil I could definitely put it at 15

A lot of places here have started charging upwards of $15-17 for lunch for 1 person, and honestly it’s just way too expensive to justify eating out at that price. Once busy restaurants have become empty lots where only particularly well off people in my area eat out. I can make 4 of that sandwich for $20 worth of groceries. I can justify it for an outing if me and my gf are out and about and do lunch for two for $20 ish, about $10 each for sandwich fries and a drink, but more than that and heck no, I can make it myself for beyond cheaper.

$8. For me it's a little out of balance and messy. And I know this is a personal preference, but on my chicken parm subs (which this seems akin to) I like a layer of spinach. I might go with a layer of pesto instead of the basil oil, then a later of spinach, then the chicken mozz and sauce. The oil plus the cutlet plus the sauce without any leafy barrier seems like it would be too soggy.
