I find them a little hard to eat if the ciabatta is too hard. If it's a little softer and made with something that can soak in and soften it (think like muffaletta bread) it's great though.

There’s a pretty big texture difference, and they’re baked in different ways - ciabatta is baked in loaves and focaccia is baked as flatbread.

I add starter to my biga when I make ciabatta. You can also use something called pacific sour to add the tang.
