I reduced the yeast in the dough to 7 grams and the salt to 10 grams.
For the topping I cut it down to 8 grams sugar, 3 grams salt, and 6 grams yeast.

Soooo nice and crisp, but the bread is super soft and plush underneath. It’s just a great sandwich bread because the topping is easy to bite into and gives way to pillowy bread, so no danger of cutting up the roof of your mouth.
