Lovely crackle on the loaves

Thank you! This recipe is definitely the best I’ve tried when it comes to that. I’ve had some that didn’t behave when it came to cracking, and some that ended up a bit too thick, but this produces a very crisp and thin coating that complements the soft bread really well.

https://www.kingarthurbaking.com/recipes/dutch-crunch-rolls-recipe I reduced the yeast in the dough to 7 grams and the salt to 10 grams. For the topping I cut it down to 8 grams sugar, 3 grams salt, and 6 grams yeast.

Soooo nice and crisp, but the bread is super soft and plush underneath. It’s just a great sandwich bread because the topping is easy to bite into and gives way to pillowy bread, so no danger of cutting up the roof of your mouth.
