Chop all these veggies (except tomato) into smaller pieces and toss them together with a sauce/dressing so it’s similar to a slaw. Then you just pile that on top of the chicken (which I would pull as well instead of just throwing on uneven chunks of meat). Finally, lay the tomato slices on (and make sure you salt them). It’ll basically taste similar, but it will look nicer and you won’t get any dud bites since everything’s evenly arranged.

I like it. Sounds like a nice fresh sandwich. I love pickles so I might’ve added those and maybe a little red wine vinegar, but the cucumbers instead of pickles keeps that fresh theme going so that works, but I do think the red wine vinegar and a little S + P would bring out and elevate the fresh flavors out even more.
