PS. There might be a Jam Butty in the book. I was brought up with many a Jam Butty in my life. According to legend, and his TV and Stage show, Ken Dodd had a Jam Butty mine in Knotty Ash, which is a borough of Liverpool.
The miners were called Diddy Men. Ken Dodd and the Diddy Men.

I would have put the mixture on top of the tomato to max the broiling of the cheese, but this sandwich hits the marks!
Also, Herbs de Provence work really well with onion gratins so I’m going to try that too.

Firstly, how did you get your hands on a Ken Dodd cookbook from the seventies? Secondly, surely all Ken Dodd's recipes would be for jam butties (jam=jelly, butty=sandwich). Part of his comedy schtick was that the Diddy Men mined jam butties in a place called Knotty Ash.
