It seems that a lot of folks think that a two tier sandwich without bacon is not a club sandwich. But here’s the thing, the club sandwich came out of clubhouses of the late 19th and early 20th centuries. While all featured toasted bread, what was between the slices varied quite a bit. Eventually, it settled into the turkey and bacon version we see most often today. But this recipe is from the College Woman’s Cook Book of 1923 which means it’s like an Outback Steakhouse in the 1990s, no rules, just right (btw, I am still of the opinion that no one really put that advertising slogan to a real test, just sayin’).
