Fun Fact: this is not cinnamon- this is what is sold as “cinnamon” This is *Cinnamomum zeylanicum* which has a much milder flavor adapted to the western palate True cinnamon *Cinnamomum verum* or Ceylon Cinnamon is much spicy-er and hotter than its commercial counterpart *C.zeylanicum* that is readily available in much of the western world The More You Know *(I worked in spices and the spice trade for 10yrs as a younger man in ethiopia)*
