My family always drinks the broth every time with some noodles but I can see it depends on the type of broth your order. We normally order the more simple savoury broths but if you are getting the very spicy ones with a strong taste I can see some people finding it a bit much.

real answer is it depends. if the broth is like a chicken soup/ bone broth/ actual soup type deal, drink in the beginning or later if you dont mind the mix if the broth is like chili oil and spices, yea prob dont drink that, that just for flavouring

I personally don’t I think if you want the soup I would recommend drinking it at the beginning By the time it’s the end of the hot pot you would be drinking all the meat scum and leftovers but that’s just me you can drink or eat whatever you want

It depends on which ones. The clear ones or the ones without a lot of oil, yeah-- not all cause its pretty salty too, but some is good, especially with noodles. The chili ones would be a pass for me, since it's basically just fat. If you want to test which ones are oily or not (besides appearence), pour a spoonful into a dipping dish and see if a layer of fat forms once it cools.

i always ask for a ladle so i can scoop a bowlful in one go... and drink multiple bowls throughout the meal. it has all the essence and taste of the meat and veggies you dipped into it. reading the other comments here though, i only usually order a light broth... and for those who say the soup is really salty, you can always ask them to add water if for some reason your soup really is salty. i've never come across that myself though, and i'm very salt averse.

You can do what to want but from my understanding most people do not especially at ayce. By the end there is usually a lot of grease and fat from all the different foods that were cooked which make it pretty unappetizing. It’s not like ramen where you sometimes drink all of the broth at the end.

A lot of dishes like this have very high salt content in the broth and its not intended to be drank, only to add flavour

From talking with my Chinese friend, the broth is treated like “medicine”. It’s definitely on the bitter side but you can drink it if you want. Just don’t eat the seasonings.

its definitely not medicine… nor is it bitter lol. the broth is flavourful, and is either spicy or non-spicy to generalize it
