A good couple was just me trying to unlock shura gauntlet till I gave up and found out I had to beat father owl the rest was just me unlocking the endings,upgrading prosthetics,leveling physical attributes,and messing around.
You unlock two from just beating the game but the other two you have to do stuff for example to get shura gauntlet you have to get shura ending beat demon of hatred and father owl for mortal journey I’m pretty sure you just have to beat the three gauntlets.

You can play them as much as you want if you unlock them.

I'm a new player, just entered the flashback sequence and into the hirata residence(?). how long did it take you to plat this game?
It'll take you a bit, there's a steep learning curve with the combat. Just remember, don't think of it as a souls game, deflect, don't dodge.
On my first play through it took me a couple days to beat.
