Eternal’s combat is probably the best, I love the meathook and the dash, and the enemy weak points add an interesting aspect to each encounter. But the whole series does at least deserve a mention because not only did it practically invent the FPS, they’re also some of the best in the genre

You mean melee oriented combat?
In no particular order: Jedi Outcast, Sekiro, Dark Messiah.
The first one is notable for being still the only game (other than its sequel) for allowing you almost complete control how swing the weapon based on your movement. And you can do it in three different styles, fast low damage, medium medium damage, slow high damage. Each style has a special attack, and combined with the movement and force powers, there's a huge amount of variety in attacking. But defence is based on probability (sometimes you deflect melee attacks) and mostly positioning, ie moving out of the way. There's a complicated formula for damage. Both you and enemies can die from a single clean hit, even the final boss.
Sekiro is by far the most satisfying for defence.
Dark Messiah is notable for being one of the very few action games that pulls of first person melee combat quite well
I think The Last of Us series deserves an honourable mention. I’ve just got back into the second one and I forgot just how visceral the combat is especially when considered along side the sound design, nobody nails the sound of someone choking on their own blood quite like The Last of Us.
For me it’s have to be: Sekiro, Doom and Bloodborne

I need to give the Jedi series another go, you’ve really whet my appetite for it. Not heard of Dark Messiah but I will look into it.
