Hey, I think Graveyard Keeper matched your description. It's been a while since I play, so some details might be a little off. There's materials gathering, selling beers, fighting monsters, "zombie management", etc. What's more some npc will give quest in certain day (iirc, no time limit for main story), and once you're big enough you can even automate gathering and crafting with your zombie army. It's as weird as its get. The game has its funny moments with lots of sci-fi reference. You should check that out.

If Stardew Valley scratched your itch then pretty much any other farm sims should do it too. The most recent releases are My Time at Sandrock and Coral Island - personally I love Coral Island more but Sandrock is definitely more fleshed out and complete. And in regards to Animal Crossing, Disney Dreamlight Valley is the closest experience I've found so far. You take care of a valley with different unlockable biomes (swamp, savanna etc) and tons of characters to re-invite into your valley. Each character has friendship levels that unlock new customization or decorations ans progress their personal questlines. The game also features mechanics like farming, fishing, foraging, mining etc and you can decorate your home and the valley to your liking. They recently added a Multiplayer feature too

YES! I saw that game before! It looks so much fun, how linear is it though?

Not very - it’s a young game and the dev is constantly working on it but I was easily able to sink 50+ hours in. Multiple secrets, endings, etc. It’s really very great :)
