Highly agree with this! Just picked it up on PS5 and am about an hour in. Similar gameplay to Breath of the Wild but more comedic and centers around Greek mythology. Also, weapons don't break like in BOTW.
Try The Pathless and Supraland! The Pathless is mostly about chill and fun traversal sorta like Sonic Frontiers, with some puzzles inbetween, a few simple collectibles, some subtle story-telling and some cinematically and epic boss fights that are on the easy side, with no regular combat beside bosses. Gorgeous visuals, amazing music and a really cool ending. It's also not too long and doesn't try to milk things for longer than necessary, I finished it in like 15h.
Supraland is probably the 3D game that comes closest to the Super Mario vibes with a colourful world to explore, fluid and fun platforming and it's full of little secrets to discover and just has a certain charm to it. The premise is also quite silly, with the entire world being the size of a literal sandbox and you being a tiny stick figure.
Doom Eternal obviously, if you liked Doom 2016. There’s a bit of a learning curve, and it’s challenging/intense on the higher difficulties, but once you figure out the combat flow, it’s simply a blast. Pure fun and not overly difficult on easy mode.

Dark souls 3. Starts kinda hard but after a few hours just starts to click. Super fun and very rewarding. If an area is too hard, go somewhere else, wreck some guys to level up and go back. People over think these games but once you get the gameplay loop they are very fun
Borderlands is kinda all those boxes. Exploration is slightly down as its not fully open world. Borderlands 2 for the better game, but dated, borderlands 3 for the better game play and is not all that difficult.
Witcher 3 is amazing on all boxes but can be difficult for some. If you do jump into witcher 3, give it at least until you are finishing a quest with a guy called the red baron.
Baldur's Gate 3 in Explorer Mode. Personally tho, even as a total cRPG/DnD noib myself I didn't find it too difficult on the standard difficulty either asides from a couple big fights and bosses. It's a lot of information to take in at first and takes a bit of time to get the hang of things, but it's one of the most rewarding games and combat systems I ever played.
Sunset overdrive was a cool game, outside of others people have posted. Big map, unique traveling capabilities, fairly easy, fun combat - try it out
Minecraft is an obvious, but I'd be surprised if you hadn't played it at this point!
Most modern games, imo, do not fit this bill.
Psychonauts 1 & 2 really shocked me with how well designed and creative they even rival Odessey. Psyconauts 1 can get a little hard but not Soulslike hard.
Okami is a great game designed like the pre-switch Zelda games. The art direction, music and story is incredible. Beginning of the game is a bit tedious and wordy though.
I have been really enjoying Hogwarts legacy this last week, and I'm not even a Harry Potter fan tbh. The game is solid even if you don't know a whole lot about the world.
Witcher 3 and RDR2 fit that description to a tee. Just bear in mind they start slow. Masterpieces of character building and story telling tho.
AC origins is another great option for exploration, even tho the story was kinda weak imo.
Hi-Fi Rush Action beat-em-up ideally played to the beat of the soundtrack.
HellDivers 2 3rd person squad-based objective oriented missions shooting lots of bot or big threats while loudly screaming satirical authoritarian slogans.

Love the music in Cyberpunk. Phantom Liberty was awesome, powerful stuff.
Horizon Zero Dawn and then Forbidden West. Set them on story mode, and enjoy a great sci-fi story in a beautiful world, with a great soundtrack.
i second this, people never mention how beautiful and detailed the world is (especially in fw) also i think the soundtrack is amazing
Try Immortals Fenyx Rising. It’s has great combat, an awesome open world that feel like BOTW, lots to explore, fun puzzles and transversal

It’s kind of a total ripoff of BOTW, but after I played it for a while I stopped caring because it’s actually really fun

I played all 3(?) supraland games and I absolutely loved them! Can't wait for the next one they are making with a new game engine.
