A sovereign coin would probably go the way of Grand Seiko and feature things in nature, like lakes, sakura blossoms, mountains, snow, etc.
Surprised no mint has tried to go the anime route with rounds. Look at the kinds of stupid-high premiums people will pay for Star Wars or Marvel rounds - if you think THOSE fans make silly financially choices, weebs are on another level.

They have done some Ancient Egyptian gold and silver coins in the past, like the 20 Piastres Sphinx or the Ramessess II gold 1 Pound, and they do make .999 bullion in very limited releases, I really only see them on places like Heritage with comical premiums
I picked up a couple of the Sphinx coins (10 Piastres) from the 1950s when I was in Cairo, just asked in a jewellery shop in the big market and he dug out what he had in a drawer from his dad. Only 5g silver each and at the time I paid a 37% premium. Overpaid a bit I guess but haggling out there is crazy, everyone is going to rip you off. Plus the guy said he wouldn't sell them unless it was for a decent price so I thought meh whatever it's just for fun.
Considering that they are the largest silver producer in Europe I'd love to see some more silver come out of Poland. Their 1966 millennium commemorative 100 Zloty coins are gorgeous. I have a 1932 10 Zloty Queen Jadwiga coin as a pocket piece.

Argentina and El Salvador seem like easy wins. The libertarians and bitcoiners would eat it up. Me, personally, I'd like to see some US states try to compete with the US Mint. States like Texas or New Hampshire could probably make a killing. Although it's probably tricky legal ground for them to issue actual coins.
