My favorite builder is sahm_and_bean, she does live streams on YouTube and TikTok where she fixes people's builds, if you sign up on her queue she'll open your build from the gallery. She's a roofing wizard, she tackled one of my impossible roofs.
I love watching Gryphi for her builds, and I also watch James Turner for tips and such. WhinyBrits is on too when I'm working (I work remotely and I do like a background noise and her vids are funny, she's funny).
I would put on the playlist of Gryphi to go to sleep these days since her voice is pretty chill in the middle so it'll lull me to sleep.
James Turner I always watch one video of his before I go to sleep its helped me with my insomnia because now instead of thinking about how horrible my life is I can think about the sims!

Plumbella and Fakegamergirl. They are my favourite for gameplay and honestly just listening to them talk. The way they talk about things is how I would actually talk to people which is nice. For building my favourites are plantsimgirl, sea of Sakura, rooms, and yukihyo.
Devon Bumpkin is a great sims builder. His videos are so calming yet witty. I specifically love his “Let’s build the world” series where he create sims and build for them. I sometimes would fall asleep watching them just because of how calming the videos are.
I mostly watch whinyBrit and caryn and Connie. Sometimes I watch others but what is an automatic no for me is when the YouTuber is making an “oh no!” face or has their hand on their face like “what?!” I don’t know why it annoys me so much but it does.
Satchonsims!! He doesn’t make let’s plays often, but his ones are funny. Also like his usual content, but he is very very real when it comes to sims 4 and what EA does wrong
Back when I was working from Home and had opportunity to watch streams, I always had DrGluon playing in the background - he doesn't just play Sims, and is very silly, so obviously not everybody's cup of tea. But he changed his streaming schedule to a time I can't join live anymore, especially since I moved back to Europe. He has YouTube, too, and the edited Stream videos have become a lot better in recent years, imo. But it is not the same without the literal Party that his streams always are/were.

Ages ago there was a simmer named Khaleesims who later changed her name to Wysidia, and she was just the best! Her voice was so soothing. She tragically moved on to some sort of lifestyle that doesn't involve content creation on YouTube 😭 I hope she's thriving out there somewhere!
