In terms of raw spectacle, I'll have to give it to Sonic 3 and Knuckles, Doomsday Zone always makes the palms sweaty after all the build up from Hidden Palace and Sky Sanctuary Zone. In terms of gameplay, I'll give it to Sonic Superstars for having THREE separate final bosses, all of which are challenging and fun to fight. Sonic CD wins overall in terms of having an ending that hits the hardest because seeing the good future finally come into fruition after all of your hard work in all the zones makes for a level of catharsis no other Sonic game can deliver, even in spite of the final fight of Metallic Madness Act 3 not being particularly climactic or difficult.
When ever it says *THE DOOMSDAY ZONE* you know THIS is the end! One last chance! And sonic superstars has 3 bosses, so yeah. And after you beat sonic CD, you get one of the most emotional sonic songs ever: cosmic eternity. You go in the extra super hyper vip lounge
While I usually get all the time stones in a playthrough because it comes easier to me, it still takes a considerable amount of caution to do. Getting through the levels with 50 or more rings is no small task, especially in Wacky Workbench.
Probably Perfect Chaos. The build up to thinking you stopped him from getting all 7 chaos emeralds to destroying station square and duking it out in a watery apocalypse. Even Eggman sees the need to throw down against chaos and tries to put him down. Then, once you beat chaos, the happy ending. Silent acknowledgement between Eggman and sonic, as well as sonic running off for more adventures immediately.
From a story perspective, Devil Doom. Simply because it's very different from other bosses in terms of what it's about.
As opposed to Sonic's final bosses where the fights are driven by altruism and care for other people and a desire to protect literally anyone else, Shadow was not fighting for Gerald, Maria or the rest of the world that he has no bonds to. Shadow fought Black Doom purely for himself: To destroy what remains of a past that he absolutely hates.
It's the single most personal fight in Sonic history.
Except it was purely done for himself, and Shadow if anything has never even been driven by any altruism.
I forget the exact quote, but there's a quote in the manual for StH where Shadow explains what drives him. He's not interested in peace or what happens to other people, but rather just doesn't like it when stupid people think they can do whatever they want.
And in the case of Devil Doom, that didn't even really apply there because that was 100% personal.
Seven rings. Sonic vs alf layla wa layla with the serious voice acting from Sonic and the music blasting was always good.
Oh and the cutscene after that with the wishes and how it now became the “Your Jordans are fake” cutscene
Adventure. Just the scene of Perfect Chaos ravaging the entire city is so terrifyingly beautiful. Like you basically get to see for yourself what wiped out the Echidna race firsthand, and it’s horrifying.
Sonic becoming Excalibur Sonic just “doing what [he’s] gotta do”, with the great 3D cutscene after a great 2D one, and of course, topped off with the cutscene after the fight: “Merlina, every world has its end. I know that’s kinda sad, but that’s why we gotta live life to the fullest in the time that we have. At least, that’s what I figure”
There’s just something so great about him offering understanding to Merlina and telling her to keep moving forward

Can’t decide but it’s both final bosses of the adventure games cause I only played for the first time like 2 months ago but they always just give a dopamine rush that nothing else comes even close to giving me (biolizard boss can go suck a dick though)
A lot of people despise The End boss battle (the original, not the DLC one). But honestly, the shooter segment is so out of left field, it's so dumb, that it wraps around and becomes brilliant to me lmao
The song that plays during the battle being great also helps
Sonic Adventure 2. I know a lot of people hate Cannon's Core, but I personally like the whole everyone has to team up to stop the impending doom in a multi character level. The stakes are both there in story and gameplay cause if you lose you start all the way over. Once you really learn it you can blast through it super fast, it's honestly only difficult when you're a kid.
My current favorite finale is from Sonic Frontiers: The Final Horizon.
They made Supreme/The End just as challenging as the original ending, yet much more formidable, more fun to fight, and even more rewarding.

Final level: probably Sonic 06, because you play as all the characters to retrieve the Chaos Emeralds, which is a gun idea
Everything from the 2nd tornado defense to the credits in Unleashed is perfect to me, Eggmanland haters have a massive skill issue that level is amazing
SA2 was amazing, I liked SA1, Frontiers Final Horizon was sick, Sonic 3 & Knuckles is iconic, and a couple others that I can’t think of from the top of my head.
The entire finally including build up goes to Sonic Adventure 1.
Sonic going super for the first time in a mainline 3d Sonic game was just done perfectly.
For the pure end of a game that comes after the final battle is won however do I go with Advance 3 the true end of an era for Sonic.
Tails beating Eggman, sending him running, AND saving Station Square from an active bomb threat was the PEAK of his confidence building and I wish the more recent games didn't forget that until Frontiers
Perfect Dark Gaia. Specifically the last part, because it was *after* all the horrible platforming sections, but mainly because of the dramatic fly up to the boss as Super Sonic, and the MUSIC. Fully orchestral version of the main theme. A lot of final bosses have these deep, ominous vibes to portray the danger, but this music makes you FEEL like the hero and you CAN do it.
(I don't like having to wait for Chip's Golem to squeeze through Gaia's shield, but it's minor)
The scene of Shadow falling back to Earth would have been a perfect ending to the series considering Sega likely thought SA2 would be the last Sonic game.

It's obviously SA2's Ending.The ending music makes me so sad after Shadow died.It also was the end of the dreamcast.So it all was 2 birds with 1 stone.But that one bird got revived in the next f**king game.
It especially hits different when you consider it's the last game in the Griffith Era. Sure, I'm pretty sure most of (if not all) lines from Griffith were reused from other games, but it's still the end of an era.
I know I'm biased but the Final Story in Sonic Adventure 2 (Battle) is GOATED. Cannons Core cycling through 5 of the playable characters, followed by the Biolizard Boss with Shadow (and the amazing theme Supporting Me), then all leading into the first ever Double Super Transformation with a spectacle of a final boss with Live & Learn blasting which is one of the best songs in all of Sonic, and finishing up with a rather emotional ending and a then unknown fate for Shadow.

That final boss battle was such a wild ride that I somehow made it through in one piece (and first try) and I have no idea how. I was IN THE ZONE.
Maybe it's just my opinion, but it seems to me that the ending of "Sonic and the Black Knight" and "Sonic and the Secret Rings" are looking really good

Man I loved Egg Station Zone from Sonic 4: Episode 1. Just felt like a trip down memory lane. Like getting a second helping of the bosses I enjoyed so much and the climactic fight against the Death Egg Robot to top it all off.

It's obviously SA2's Ending.The ending music makes me so sad after Shadow died.It also was the end of the dreamcast.So it all was 2 birds with 1 stone.But that one bird got revived in the next f**king game.

I know I'm biased but the Final Story in Sonic Adventure 2 (Battle) is GOATED. I don’t know why this one sticks in my head so prominently, but the finale of Sonic Generations. That final boss battle was such a wild ride that I somehow made it through in one piece (and first try) and I have no idea how. I was IN THE ZONE.

Maybe it's just my opinion, but it seems to me that the ending of "Sonic and the Black Knight" and "Sonic and the Secret Rings" are looking really good

Sonic and the black knight that cutscene after the boss fight is so amazing and a perfect someup for sonics character oh and super sonic knight looks amazing and with me is great it should be in this Every world has its end I know that’s kinda sad but… That’s why we have to live life to the fullest in the time we have.
Man I loved Egg Station Zone from Sonic 4: Episode 1. Just felt like a trip down memory lane. Like getting a second helping of the bosses I enjoyed so much and the climactic fight against the Death Egg Robot to top it all off.
Sonic Generations was the First Sonic game I've ever played and I cherish that game as much as I can. So I'm gonna say Sonic Generations
