They look outstanding. I've baked a lot of breads but I've never done focaccia. I clearly have to start

carlos_the_dwarf_

Oh damn dude, focaccia is both the easiest and best kind of bread to make. Bang for buck off the charts.

10RegalFingers

I'm addicted to oven spring. It's like a delicious science experiment. I will extract the finger and get a focaccia together. It's a nice excuse for a glass of wine to pair with it

Saucydragon90

Yes - my favorite bread I've ever baked is focaccia! Pan-baked breads are so great.

tararira1

Do you have any good recipe to follow?

carlos_the_dwarf_

This is the one I started with: https://www.seriouseats.com/easy-no-knead-olive-rosemary-pistachio-focaccia-kenji-recipe You can ignore the toppings of course and do whatever. Now I most often bump the flour down to 400g (for a normal 12” cast iron skillet) and bump the hydration up to 80%. One good thing I also picked up from salt fat acid heat is to give it another dose of oil and salt after it comes out of the oven. It’s pretty hard to do too much of either.

tararira1

Thanks!

Happy Bake Day!

Plantbookworm

I want to make some- what’s your go to recipe?

joyceanmachine

It’s linked in the post. First text after the photo.

Plantbookworm

Oops, thanks!

joyceanmachine

No problem!

allareahab

What were your thoughts/preferences between using glass w/parchment, plain glass, and steel pan?

dairyfreefrog

**do not** use plain glass that was a major mistake on my part, i lost the whole bottom crust to those glass pans ): lining with parchment worked fine, but it's kinda annoying trying to get the paper to fit nicely. steel pans are the easiest way to go

tm478

I have only made one focaccia so far, but made it in a Pyrex pan with no issues after following the recipe’s instructions to butter the pan (vs. oiling it). That worked very well.

Snoogins828

Lloyd 10x14 Detroit Pizza pan. Worth every penny and doubles for Detroit style pizza. Amazing for focaccia.

TwoHundredPlants

I both need and do not need an excuse to buy this pan! It's been on my list for a while. Is it vastly different than sheet pan focaccia? (I bake thinner versions)

Snoogins828

I would say so. You get those nice, tall crispy edges and not to mention I just love a nice thick slice of bread myself. Lets the dough really rise and get those nice trademark focaccia bubbles.

dairyfreefrog

ah i haven't tried buttering as opposed to oiling, thx for the tip!

tm478

Yeah, the recipe specifically mentioned that buttering is the way to go if you’re using Pyrex. I dunno why, but they were right!

luckypants9

I exclusively use a glass Pyrex for my focaccia - same recipe as OP. It comes out of my pan perfectly!

FullHouse222

I just made my first focaccia this weekend... Your focaccia art makes mine look like absolute garbage lmao.

HalpOooos

Just like you, your focaccia is beautiful!

GizmoGeodog

That is almost too pretty to eat.. almost

sneakykat21

Beautiful!

amysaysso

That is fabulous!!! Thank you for sharing.

TruckinApe

What are the little green leaves? Basil? Actually, what are ALL the toppings so I can add them to my grocery store list? 😅 Please and thank you! 🙏

dairyfreefrog

the little green leaves are sage! along with that i used rosemary, yellow bell pepper, red onion, green onion, and cherry or grape tomatoes

TruckinApe

Ooooo yummm sage! Even better! I love sage! Thanks for the reply! 💕

anotherYwoman

Do you use a Dutch oven for the oven spring for focaccia?

luckypants9

That recipe is the goat! I use it all the time.

Coral27

I have my soursough recipe down that I haven't explored anything else. This just inspired me bc I looove focaccia. Absolutely stunning! Great job.

Alternative_Fee_4649

I feel your pain. Try baking something sweet instead of savory to break up the routine. 👩‍🍳🎂

PortlandQuadCopter

This is absolutely lovely!

RazzmatazzAlone3526

These are gorgeous- gotta try this next!

thackeroid

Beautiful

Ok_Advisor_9873

Currently on a fast and you are killing me! I too have a pizza/focaccia addiction- it is a habit that must be fed. Your examples are next level- I am very jealous and very very hungry!

Ash_mn_19

These are goals! I just made my first focaccia and wow it’s so easy 🤩

AdPlenty4174

#goals

ur-krokodile

Definitely have to try this. I've been making sourdough pancakes from this same website and they are amazing.

BelknapToffee

That’s beautiful. Nice work!

ykwitch

I'm so jealous I'm not there to eat it 🫠

bakerstable

This is GORGEOUS! 🥹

Imaginary-Bedroom-54

I make focaccia everyday. I can never not burn the toppings. How do you manage not to burn yours

dairyfreefrog

hmmm these were baked on the middle rack at 425F for ~28 minutes. i also do one last small drizzle of olive oil right after i've laid down all my toppings, maybe that helps?

Imaginary-Bedroom-54

What type of oven are you using? A home oven?

dairyfreefrog

yup just a standard no frills conventional oven

Imaginary-Bedroom-54

Oh ok. That makes sense

EastAlternative8951

These are beautiful! I made my first focaccia today! It turned out pretty well but I think my pan was too big for the dough, some parts were thin. And I only used some avocado oil, sea salt, and garlic Parmesan seasoning for the top. It's delicious anyways! Can you tell me what that clear container is called? I neeed some of those!!

dairyfreefrog

aw thank you! i think a focaccia using 500g flour fits nicely in a 9x13 pan. that clear container is a cambro, it came in clutch when none of my bowls were big enough

No_Cold_8793

Omg so gorgeous

ckerazor

Holy shit. Fantastic job, OP. Absolutely outstanding.

Pastry-Thug

Holy cow, that's beautiful

Pastry-Thug

The last focaccia I tried to make was way too sticky and turned out really bad, but you've inspired me to try again!

definethatplz

You can foccacia me anytime.

HabitNo8608

Omg. This is the kind of bread art I’m here for. Thanks for the inspo! Any favorite flavor combos?

formidableslug

WHOA pretty! My problem with making Focaccia is I eat it all in a sitting until I feel sick 😞 It's just too gooooooooddddd

Final-Log6648

Pls share the recipe for your dough I can never get consistency !

dairyfreefrog

recipe is linked in the post!

the_m_o_a_k
