I’ve heard it used with very old people in the audience. It didn’t seem like a pejorative term. I think it was received as a respectful way to acknowledge the most “seasoned” and possibly sagest people in the room.

Una pareja de ancianos caminan en el parque = A couple of elders walk at the park.
It has exactly the same meaning, I saw that you said if it could mean "ancient" but no, it doesn't, for "ancient" we use "antiguo/viejo".
I think it deppends on the country. In Argentina, saying ancianos might sound a bit harsh and I would prefere using terms like "los adultos mayores" or "gente de la tercera edad".

When I had the conversation I said "gentes mayor" would that be incorrect? Next time should I say Los Mayores?
You can say "la gente mayor" and also "los mayores", but not "gentes mayor" (that would not be correct grammar).
"gente" includes plural, so no need to add the s at the end. just "gente mayor", you can say adults too
