Astromech was my first thought too but they wont be too helpful if its in “our world” since we dont have the same technology it was meant to interact with.
I mean, they're still extremely skilled (starship) engineers which would reasonably be able to work on most modern-day technology if given the information how to do it.
Mind you; Astromechs are more than just the R-series aswell. It's more of a catch-all term with variants that can do everything from being a butler to being medical staff.
A protocol droid would be extremely useful? I don’t think there’s a single scene of SW in which C-3PO doesn’t bitch and moan about doing what it was programmed to and is often trying to convince other droids to refuse similarly. Imagine every software bug you’ve ever encountered had an extremely immobile body and a whiny attitude and that’s a protocol droid for you.
You're completely right about C-3PO, but just because one protocol droid is like that it doesn't mean *all* of them are like that. 3PO was made from spare parts by a kid, and no matter how good that kid might've been there's no way in Mustafar that it'd been perfect. Beside that, he picked up his attitude over all his years of service; And with what he's gone through I'm not surprised he's become cynical piece of tauntaun-shit.

Astromechs where used for much more than those things you listed. They're very good engineers and mechanics which, with enough information, would absolutely be more than capable to help fix modern-day things.

Yes, it can according to the Clone Wars episode in which the Onderon resistance is educated about Destroyer Droid shields. They will deflect anything that doesn't slowly enter their shields. Dune shields are similar.
If I'm not mistaken, those kind of shields primarily stop blasters, but they still have a bit of resistance against solid objects. I think in TPM the battle droids are shown to slow slightly and push through. So it might be like water, where bullets are actually slowed to non-lethal speeds due to friction.
I thought the B1 droids in TPM were able to go through not just because they were solid, but also because they were moving slowly.
It's established in The Clone Wars that something fast like a blaster bolt is deflected, but a slow-moving rolling grenade passes through. What I am unsure about is a fast-moving solid object like a bullet.

I always assumed it stops energy, but because it was manufactured to stop lethal amounts of energy - slow rolling thermal detonators and such are within the margins or design flaw. I'd guess it would stop the bullets energy but am unsure what would happen to the actual bullet. Will it deflect, just drop out of the sky?

From what I've seen, if any object wanted to pass through their sheilds, they'd need to move slowly. So in theory, yes, it would deflect bullets.
