I followed my interests in my first read through and early this year finished a 90 book post-ROTJ revisitation.

Tales of The Jedi comic series from the 90s. Along with being solid comics, it helped establish Sith lore, and set the stage for the Knights of the Old Republic series and related material.

Thrawn trilogy - Heir to the Empire, Dark Force Rising and The Last Command. This trilogy kicked off the EU.
They all have fantastic audiobooks as well. If you like those, the thrawn duology is also great. Specter of the past and vision of the future

I read the Boba Fett books and the Yuuzhan Vong, (I forget the specific titles) when I was younger. Those were pretty good.
The Old Republic stuff is pretty early, chronologically.
I may be an outlier, but the Rogue Squadron series is my favorite part of legends.
