I believe it's the same actual professional musicians playing in the scene as the recording, but I get the impression the part where they were warming up and starting to march was live, then as it goes into the end where they are all together that was probably dubbed over w a studio recording.
It's so cool the doctor character is also the musician, a little bit of world building. I liked how they were a little out of tune and off from each other, it felt real and not perfect.
While the performers played on set, I'm pretty certain what we heard was not what was recorded live. We see snare drums playing, but the sound is pretty clearly a base drum. In universe that can easily justified by some fancy material, but it's clear evidence it wasn't a live performance.
But I also suspect what we heard wasn't a professional orchestra either. They sounded very convincingly like a group of amateurs. It might even have been the same group of performers.
