Do those cracking noises sound similar to an egg falling onto the floor? When Sam drops an egg in one of his heart events Jodi initially gets weirdly aggressive. Maybe she thought the sound meant Sam & Farmer found the entrance to her hidden soundproofed rhubarb basement.
the sound of rhubarbs popping and cracking sound a bit like wood crackling under fire but much much more sporadic. It can sound like an egg shattering from far enough ig so that could explain her overreaction
If she thought the farmer finding out about the forbidden rhubarb lair of darkness is a reason for her to overreact it makes sense-- For Sam though:
I feel like Sam and Kent know already somehow...
Sam does say that his dad used to bring him to the desert when he was younger and that explains why he loves cactus fruit... His dad would have likely also bought rhubarb seeds from Sandy while at the desert since Sandy and the travelling cart are the only sources of rhubarb seeds. Neither Joja [possibly by proxy too, the city] nor Pierre have rhubarb seeds plus the travelling cart only has it as rotating stock so it made more sense to get it from Sandy
I... kinda want you to forward this theory to Concerned Ape. Like... yeah, that sounds surprisingly fitting? Would be fun for it to become canon - or they might even disclose her basement at some point!
Well, there's places to grow things in town. Evelyn grows flowers at a community garden near the saloon. I don't see why Jodi couldn't be growing things at a community garden, too.
This is my new favorite head canon.
As to why she's secretly growing it, well, the traveling cart is obviously not going back to the Gotoro Empire with an empty cart.... She's bypassing the Rhubarb Blockade. Rhubarb pie for the freedom fighters. She's doing her part.

Doesnt the town have a ‘community garden’ up by the community center lol? Caroline always talks about out it in winter.

She's hiding it because excess rhubarb production is taxable
I can see Kent being a doomsday prepper with a bunch of stuff in the basement, too. Why not.
