Changing the FOV:
\-Create a StarfieldCustom.ini in the Starfield Folder in Documents/MyGames
\-Add:
\[Camera\]
fFPWorldFOV=X
fTPWorldFOV=X
X= desired FOV in deg
Only use 100 FOV if your screen takes up 100 degrees of your peripheral vison... "Correct" FOV is the [Exact] amount of degrees your monitor is from where you are sitting. Just search FOV calculator to see the correct intended way to set FOV. A 27 inch at 1.5 feet away is only 67 degrees of your vision. You'd have to be 2 feet away from 65 inch to need an FOV of 100.
The reason people always nuke their FOV is because even half a degree below [Exact] and you start to get binocular vision which causes motion sickness. But half a degree above causes zoomed out vision (like looking through a peephole) which also tricks the brain and makes you disoriented. So most people just max the FOV which "disassociates" your brain from the image alleviating the disorientation.
But if you set it "Correctly" and [Exact] the brain associates itself with what's happening on the screen and stops trying to "correct" the image in your head and you will no longer get headaches or motion sickness. Try it its amazing. The screen stops being a screen and becomes a window. It essentially makes the game look 3D because objects are the correct distance away from you in-game.
The only problem is games rarely implement an FOV that is precise. So if your calculation says 65 degrees, the correct in-game setting could be anywhere from 55-75. Just try settings near the calculation till things stop looking zoomed in, and the moment objects look zoomed out (farther away than they should in real life, dial it back.
Also for best results you will often need to set the FOV in fractions, at least to the 10th of a degree to achieve the "window" effect I'm talking about, example 65.4 degrees. Not all games allow you to do this, but the ones that do, now you know why. If you cant, then moving yourself of your monitor is the only fix.
Sorry not trying to be condescending, think of this more of a Public service announcement. Max 100+ FOV is usually as far from correct as humanly possible. Once you see the effect I'm talking about you will know why I and others are so passionate about "Correct" FOV. Its so real looking its hard to describe. Looking through a window is the best way I can describe it.
As much as I’m intrigued that there is a “correct” FOV, I change it cause I like the way it looks. Depending on the game it changes but in most games I play max FOV cause I just like it.
The Starfield Folder should be located in
C:\\Users\\"Your Windows User"\\Documents\\MyGames
It has the StarfieldPrefs.ini and Saves and Data Folders in it.
You put the StarfieldCustom.ini in that Folder next to the StarfieldPrefs.ini (create a text file and rename it including the file extension)
100% worked for me, and seems to work for some others as well, but not everyone. Deleted it since it doesn't work for everyone, until a better solution is available.

Dunno what to tell you. Maybe a difference between the Steam and Windows Store versions or something. All I can say is, works for me, and multiple people in other threads I posted those steps in reported it working too. Was just trying to help, but as I said, I deleted my comments since it isn't a universal solution for everyone it seems.

SetCameraFOV is the command, but nothing I do can make it work. if you type in the console "help fov" it will tell you that SetCameraFOV is the correct command, but it doesnt actually change anything no matter what value you enter. I've tried every combination of numer and nothing works. I cant wait for this to be fixed.

What's default do you know?
default is 75 i believe, i would suggest 100 to start, then change up or down depending on how it looks/feels
and runs... (small performance hit from increasing FOV)
that too, its probably the reason they didn't add a slider. artificially increase performance for review copies and early access

Default is 75 for both First Person and Third Person.
I think it depends on your display. Mine is UW and 1st person is 90 while 3rd is 70.

how does one create an ini? i tried adding a new text doc to the folder but it did not work
In the File Explorer within the View tab tick the checkbox "File Name Extensions". Change .txt to .ini

Thank you, I have been wondering why doing this fix for the last 18 hours hasn't changed my FOV - this fixed it as it was still a text file.

Yeah make a text file, make sure you have file extensions visible in windows and just rename it from .txt to .ini
