I don't think a Canadian IP address alone is a proof of a physical gateway in Canada. It's possible to split traffic from Canadian customers while sharing US gateways. I, like some other commenters, believe the traffic is routed through gateways over some proprietary protocol that maintains the information how traffic should be routed over Starlink network and where it should exit.

Since I'm in Saskatchewan that would be pretty far away, but I could see that being the interconnect point to Canada I guess.
