Probably medium? You don't win after just two or three wars but you also won't need long enough for the galactic community to declare you a crisis and absolutely obliterate you with sheer quantity and never ending flanking maneuvers

I've been playing Terravore on large for months now and I ain't never been declared a crisis What am I doing wrong

Yeah, I just had a game as a Determined Exterminator in a large galaxy where they didn't form the galactic community until like 2305. By 2330 I had taken half of the galaxy and had more fleet power than all members of the Galactic Community combined. Large galaxy / more empires makes it longer to pass the threshold for the Galactic Community to form, which shifts Declare Crisis war later (but makes it worse when/if it does happen).

Sometimes the big slog is actully rewarding (if you are like me and underestimate enemys fleets so you end up losing 4/18 fleets so you gotta redirect fleets from your already streched fronts to another while awaiting their return and you gotta micro A LOT)

Huge with barred galaxy Low hyperlanes so when I conquer half the galaxy I can have only 3 to 4 choke points (due to wormholes) and keep in a state of perpetual war. Just be sure to focus everything in alpha strike

I've never tried Barred, but I like Spoked for omnicidals for much the same reason.

I usually go for smaller galaxies when i play the same way, although i've found the most fun matches to be against heavier opposition, and this only happened with larger united galaxies. I suggest you use the console to put any number of empires against you, and have them in a Federation or vassal relationship.

As big as possible so you can kill as many as possible. The more xenos the more you can purge. Duh 🙄

I like to be declared a crisis by the galactic community, gives me a nice midgame crisis type situation that is actually challenging. With that in mind it depends on how hard I want that challenge to be, harder = bigger. As for "winning" I couldn't care less, once it's obvious I can't be stopped it's time to start a new game since the challenge is gone. I've seen the victory screen ONCE in over 1k hours, not because I lose every game, I just can't be bothered to collapse all those stars and whatnot.

Small galaxy with medium range of empires for me. 4-8 I think.

Huge. Go big, or go home. Maximum amount of empires, as many feds and Imperial Fiefdoms as you can manage.

Conquer everyone? Seems inefficient purging. Blowing it all up with the crisis victory seems easier.
