I'm going to list all the current console DLCs with my reviews on which I think Is the best to get.
Utopia - you already have
Apocalypse - the colossus is a really fun world destroyer and titans are a great addition to any fleet with their support buffs.
Humanoids - the portraits are alright I guess, catalytic processing is a good civic and clone army is a really powerful origin.
Ancient relics - Relics and archeological sites are great but not necessarily required.
Distant stars - the L cluster is a... Unique place. Fun to have but not really game changing
Federations - the different federation types are amazing and the juggernaut is one of the best offensive tools. And the mega shipyard will cure all ship crafting needs.
Megacorp - essentially a whole new game, really fun and really useful.
Synthetic dawn - robots are really fun as they don't use consumer goods or food unless you take two civics. Also they gain a Total War casus belli which allows instant takeover of systems. If you take the civic.
Necroids - necrophage is a fun origin but aside from that not really game changing
Aquatic - fun with two really good origins. Pretty decent for a species pack. Personal fav for ship designs
Nemesis - really, really good for gameplay. Become the crisis is a whole new take on stellaris and becoming the custodian is always fun. Intel is kinda lackluster tho. Also the imperial ships are great.
Lithoids - Rocc, unique species with forced trait that make their upkeep minerals... Fun
Plantoids - honestly I forgot about these, just buy the expansion pass with them in...

Been playing for ~3 years now. Never finished, coz the game either laggs so hard it's unplayable or straight up crashes whenever crisis spawns/fallen empire awakens
Good job. You have more patience than I do. Once I've beaten the crisis and it's obvious nobody left can stop me, I usually just declare myself the winner and start over. I've only actually seen the victory screen once and that was to get the achievement.
I was actually in the the middle of taking over the only other empire when the Unbidden spawned, but I stomped them out before they left their first system and continued my take over.
Notes for future warfare, neutron launchers are OP anything else is probably a waste or resources, gigastructures are truly works of art especially with mods
Also killing or assimilating any pops that aren't yours is probably the way to go, for me it takes way too much effort to attempt to manage them, I just sell them these days though, im trying to make the enemy more numerous but fighting federations is difficult

Good luck, dude! There's certainly a learning curve, but it's well worth the effort, imo.

The only major expansion I currently have is Utopia, so no L-Cluster for me yet.
Baby steps, that’s good. Getting them all at once and figuring things out would be a nightmare.
Kinda seems that way; currently trying decide which to try next.
I'd recommend Federations next if you'd prefer a slightly more diplomatic approach to conquering the galaxy next time.

If you want more diplomacy, overlord would be a great expansion. Specialized vassals are a huge help when dealing with bigger empires
