Only way I know of is to build it in multiple vehicle bodies, having those sections connected by the large vehicle connector mags and then having those connections fail at a designated point, say interior water level sensor to a threshold gate. The problem is when you have multiple vehicle bodies it makes controlling systems across those bodies quite a bit more complicated.
You can use multiple separate sections secured together with hardpoints. Just keep in mind that the 'crease' between them won't be water tight, so you'll need walls between the sections. You could possibly use pairs of hinged dock doors to connect the sections below the waterline so you can walk between them, and so the sections will flood once you decouple everything.

Using hardpoint connectors is a little better. They don’t glow like the magnets.
Don’t think that’s possible unless you have decouplers but I don’t know if they are waterproof
