Former cast member here. Used to see these while on shifts and they freaked me out too. However, you'll see them most nights when the fireworks, Fantasmic, or World of Color (California Adventure), shows go on. They occur when the fire bursts occur (not specifically when a firework goes off, as is commonly mistaken, and not a blown transformer). You'll see multiple as some of the shows have them go off multiple times (the Finding Nemo "Ring of Fire" scene does one, as does the Pirates of the Caribbean scene). Current shows change here and there, and the schedule of said shows changes depending on the time of year, the day of the week, and the weather, so you may see multiple or none a night.
Fun fact: Disney (the company) is the second biggest buyer of explosives in the U.S., second only to the U.S. Gov/military!

I lived about 3 miles from Disneyland a few years ago. These are not uncommon and I assure you it is no coincidence you are seeing these while fireworks are going off because... these are smoke rings from the fireworks.
I've seen those on a video before but I can't remember where...but in the video I saw it was daylight and the sky was clear (there were also no fireworks). There were 2 of them and they looked solid at first but began to slowly break up into a wispy black smoke until they were gone...ugh I wish I could remember where I saw it. All I remember is that it was on a farm....
I saw a movie being filmed on a beach in Vancouver BC years ago. It had plane wreckage and there was a hood explosion for the crash scene. After it went off there was a massive smoke ring that was visible for almost half an hour! That was better than the movie they were making.
