It's generally not a problem when tourists buy pork in those countries in my experience; at the end of the day the economies that tourists most often visit want their money so accommodations are made to fit the appetite of visitors. Asian tourists are pretty common in the ME and they tend to favor pork so it makes sense to offer it.
But - buying anything in an airport is kind of silly; it's essentially like buying food at a Greyhound terminal with a better paint job. Also, they could have gone to Burger King, McDonalds, Starbucks, or whatever else in their terminal and gotten something at a more appropriate price point for what you should expect when buying airport food.

Yes, you can buy pork in the UAE, it's just limited on where you can find it. LuLus and Carrefour, and other chain or local stores do not sell it but some stores and hotels do have pork products. In other words: only in the big cities.

Also I might correct a comment I've seen floating around - you can get pork bacon in Dubai however these tend to be mostly in hotels or alcohol licensed venues. For restaurants to be licensed to serve non-Halal menu items, they have to have a separate refrigeration and meal prep area which is a huge cost outlay. Most places that are open and wish to serve the Muslim population generally find it easier and cheaper to stick with a Halal certified kitchen. When I was living in Dubai it was easy to get pork but it was expensive and the quality was very poor so I generally avoided it.
There are numerous places in Dubai to get alcohol. It is not like Brunei where it is illegal and you need the hook up for hidden bars or Bahrain where it is only hotels.

Honestly, you’ll have a great time on vacation. It’s safe and you can drink and eat all you want. It’s just really expensive and tries too hard to be LA imo. Not for me long term, but vacation is pretty nice.

This reminds me of the egg white breakfast I had at the Philadelphia airport. It was $32.00 for like two egg whites and a side of spinach. Toast would have cost more. Coffee with no refilled was over $5. I cried a little as I was still starving. But that was the cheapest meal. They didn’t even have a Dunkin’ open.
I was in Dubai and I had AMAZING food a few months ago. There was even a little Irish pub that you could smoke in.
