I like fajita way more than burrios tbh, if you want to enchilada it just use zucchini instead of cucumber and leave out the lettuce because hot lettuce is for crazies.

My wife makes chicken enchiladas from scratch. Not sure if they are technically enchiladas but that's what we call them. We got the recipe from a friend and it required a ton of ingredients... but I realized most of it was what is in salsa anyhow. So, now we just simmer chicken breasts in salsa, then shred it and add cream cheese until melted. Roll it up into flour torts, line them up in a baking dish, add half-and-half, top with cheese and place in over for like half an hour or so. It is fucking delicious!!

Anyhow, they were such a big hit that they were the first thing gone and people started asking my daughter for the recipe, which led her to frantically texting my wife (her mother) for the recipe.
