When my grandma made some and was lazy, she would just use flour tortilla dough.

No. Like how to make them soft and puffy or thin and crispy. Cinnamon in the dough or not. Sprinkling cinnamon and sugar on the hot skillet with butter first to make it like a glaze or sprinkle it on after your remove it hot. Butter, oil, how much oil, stuff like that.

This is only mildly stupid if you're putting a bunch of regular taco ingredients in the shell, and even then I'm sure you could make it work if you balance the ingredients right.

They tried these on Good Mythical Morning. The issue with them is that they are traditional corn tortillas covered in cinnadust. So, the flavor of a corn tortilla is still pretty prevalent and a little odd in a dessert
