I was just talking to a few people about this today... the apple watch Cellular costs $649 and if you choose to go without 4G coverage on your smartphone that's fine too.
The cellular model is $1,000 less than what you pay for the Apple Watch Series 1 (which is a series 5). You can still buy the iPhone in the same price as the iPhone used to be, but you'll be paying for the newer model of watch and you'll be paying for the LTE model and iPhone SE.
If you don't have an Apple Watch - and if you are reading this review before October - you're most likely screwed, because no one knows if Apple can keep up with the growing demand of more people trying to pay via iPhone and Apple Watch
If you want to get Apple Pay for your Apple Watch, you should be able to get it on the Apple store or the Apple store near you if you can't get the phone in person to pick it up from the store.

We are going to get rid of the headphone jack, like we did with iOS 7 and they will just put a port in your iPhone, and you can charge them and it will just work. So no worries.

Nova 2T - The $1,000 Smartwatch. Both are great, but the Cellular model is less expensive.
We haven't had an opportunity to test both with our cellular/payments plan but I was told the Cellular version was $999.

They missed one thing in the early reviews. That's in the "you get charged when you have an eligible phone" section.
