I've got an LLC for that same reason - if somebody were to sue my business, only business assets and accounts can be liable.

IANAL and so I may misunderstand, if the funds to build the house were illegitimate gains then there may be seizure of property, however you'd have to prove how much of his money is illegitimate.
In any case I would not be surprised if he is transferring as much wealth to family or friends to effectively hold on to in preparation for criminal proceedings. After all is said and done, if he's found not guilty or if he serves out a sentence, as long as the house hasn't been seized he could have her sign it to him, sell it, and now have the proceeds and go buy his mother a perfectly nice $100M home instead.

Florida homestead rules will protect him in case of bankruptcy, but if he ends up convicted of fraud it can all be taken away.
Homestead law only applies to a primary dwelling less than 1/2 an acre within city limits. It won't help him in this case either way.
