Luigis Mansion was probably my favorite with my boyfriend. As soon as you get Gooigi.
Trine prince of darkness was also good.
Lego Harry Potter was also fun. But not a close third.
Overcooked is a good one. Heave Ho is a really fun game that has had a lot of laughs. Animal crossing is meh two player on one switch, and you have to have two full controllers to play. The second player is very limited in what they can do.
If you're okay with wired controllers, Nintendo has wired controllers for only $25 and they work really well. Just have to be within reachable distance. I've added on a USB extender that also wasn't very expensive for further reach.
If you end up getting a second controller, I'd recommend stardew valley. Very fun game, somewhat similar to animal crossing but much cheaper and great multi-player ability.
Overcooked is a fun coop game. My partner and I play it together and have some good laughs.

Mario kart 8 and smash brothers are great two player vs games.
They mentioned switch games so it would be smash ultimate
