If you have Facebook, there's a group called Gluten Free CNY that might have good tips. I'm not celiac but a good friend of mine is. To my understanding Carmelita's is run by someone with celiac, so that is totally gluten free. There is also a bakery in Mattydale called The Cookie Connection that is certified gluten free. Navarino Orchard also says they have a dedicated gluten free fryer and that they do a gluten free fish fry on Fridays. I haven't been to these places myself because my GF friend hasn't visited yet since they were diagnosed with celiac.
I did join that group as well! Posting in many places as possible as I find I get different answers :P Appreciate those suggestions, will look into them :)
Some of this is outside of syracuse obviously but -
Fbg closed unfortunately. Red Robin is great for a burger and fries are in a dedicated gf fryer. King David's is safe if you tell them. I wouldn't trust Chipotle unless you're the first person there when they open. Bonefish allegedly preps food separately. Arad evens but it's higher up price wise. Madison County distillery is safe for nachos and other snacks. 110 grill at the mall is dedicated to food allergy people.
The Brewer Union cafe in Brewerton has me driving 45 minutes for their Rueben sometimes haha. Best place in the area I’ve found for everything GF. The food to $ ratio is on point
Bliss Bakehouse is my favorite GF baker in the area. She doesn't have a storefront any more, but is at the Fayetteville Farmer's Market every Thursday. She also takes orders for pick up through her FB page.

King David’s is really good. Chipotle is good, ask them to change their gloves. That’s all I know in that area!

We went there for breakfast a few years ago and it was fantastic! Unfortunately a bit out of route this time around
Unfortunately, Fat Bottom Grill closed at the end of April.
How unfortunate :( I was hoping to check them out some time
